Crepe Filled with Spinach and Mushrooms
One of the favorite foods of my girls is crepe. All are welcome in different shape and sizes. As you know there are so many ways to eat and flavor them. Mostly it is eaten as a sweet dish but my favorite is spinach and mushrooms filled crepe. This way it becomes a healthy and full meal. Practical and filling.
Ingredients
For the crepe:
- 1 egg
- 1 glass milk
- 1 glass flour
- salt
- liquid oil
For the filling:
- 400 gr spinach
- 4 - 5 mushrooms
- 2 table spoons liquid oil
- 2 table spoons butter
- black pepper
- salt
For the topping:
200 gr mozarella cheese
Instructions
Put all the crepe ingredients in a bowl and stir it until it becomes smooth. Heat the pan and put a little oil on it. With a help of a ladle put some crepe mix to the pan and cook both sides. When cooked take them aside and let it cool.
In another pan fry the mushrooms with butter. Stir them continuously for four to five minutes. Then add the cleaned and chopped spinach to the mushrooms and cook also for four to five minutes. If there is some water left from the spinaches sieve it. Add salt and black pepper and leave it to cool.
Grate the mozarella cheese.
When cooled place the fillings on the half of the crepe and close with the other half. Put the chees over the top. Do the same until all of the crepes are ready. Cook them in 180 C heated oven until the cheese turns golden.
