Roasted Aubergine Salad


What meal reminds you aubergine? In Turkısh cusine we have musakka and karnıyarık. But for me, I prefer the roasted aubergine salad. I like to eat it as a cold served salad rather than a hot main course. The recipe below is a frequently made salad in our family.

Ingredients

- 2 or 3 roasted aubergines

- 2 roasted red peppers

- 2 tomatoes

- 2 - 3 stalk parsley

- 3 cloves garlic

- 5-6 table spoon olive oil

- 5 table spoon vinegar

- 1 lemon

- salt

Instructions

You can either use canned products or you can roast the aubergines or red peppers yourself. I like the original smell of the roast so I mostly do it myself. Cut the aubergines to small pieces, you can mash them with a fork for a better taste. Also cut the roasted red peppers and add them to the aubergines.

Mash the garlics and mix them with salt and olive oil. Let it sit for ten minutes.

Chop the parsley. Put all the ingredients in a bowl and mix everthing. Add the lemon and the vinegar little by little and find a balnce for your taste. If the vinegar or lemon is too much it can destroy your salads taste.
