Grain Soup
On the rainy days that we miss the hot weather there is always two things on my mind; coffee, blanket and books trio or soup. As you can guess mostly soup wins. This is one of the soup days. I made a multi grain soup that will keep my body and soul warm.
Ingredients
- 1/2 glass chickpeas
- 1/2 glass wheat
- 3 table spoons of cooked corn
- 4 table spoons of Mexican bean
- 1 mid size potato
- 1 mid size onion
- 6 - 7 leaves beet
- 1 table spoon of tomato sauce
- 4 table spoon olive oil
- salt
- 1 lt water
- for dressing lemon and black pepper
Instructions
Dice the onions and potato. Cook the chickpeas and wheat. I used canned products for Mexican bean and corn, if you can find it fresh, you can use them as well. Chop the beet. Slightly fry the onions with the olive oil and add the tomato sauce and stir for three more minutes. Boil the water and add it to the onions. Leave it boil with the onions and tomato sauce for three more minute. Then add the chickpeas and wheat. Cook them for five minutes. After that add the other ingredients and cook for ten more minutes. Then before taking the pan from the oven add half of the lemon juice and salt. While serving you can add black pepper.
