Stuffed Zucchini
Just imagine that you go to a grocery store, and all the veggies and fruits are there in various colours. All of them winking at you - at least that's what happens to me :) -saying take me home. That is what happened the last time, I saw the round zucchinis and fell in love with them. My mom generally cooks standart zucchinis in a pot, but I prefer to cook them in oven. I hope you like my recipe.
Ingredients
- 3 round zucchini
- 1 onion
- 1 tomato
- 3 table spoon rice
- 200 gr minced meat
- some parsley
- 5 table spoon olive oil
- 5 leafs of mint
- 4 sun dried tomato
- 1 table spoon tomato sauce
- water
Instructions
Dice the onions and fry them slightly with olive oil. Then add the minced meat and stir until the meat becomes brown. Dice the tomatoes and add them over the top of the meat, add also the tomato sauce. Stir once and let it cook for two to three minutes. Add the rice and pour half glass of water. Cook until the water drains. Add the minced parsley, mint and dry tomatoes. Dress with salt and black pepper take from the oven.
Cut the top and bottom of your zucchinis so that they can sit in your pan. Cut them to half and take the inside out. They have to look like small bowls. Put the mixing in to the zucchini bowls. Boil the water and put it to your zucchini pan until it comes to the side of them. Before putting them to oven cover them with wet waxed paper so that their top doesn't get burned. Cook for half hour in 200 C oven.
