Broad Bean Soup
We are still waiting for the hot weather to come and heat us. Until then I will continue to cook soup on every rainy day. Today is broad bean soup day. Easy to make and very tasty. Even the kids can eat it easily. A good recipe for the ones who search for vegetable alternatives.
Ingredients
- 8 broad bean
- 1 small onion
- 4 table spoon yogurt
- 1 table spoon flour
- 1 egg
- 4 table spoon olive oil
- dill
- 1 1/2 lt water
- salt
Instructions
Cut the broad beans in to small pieces. Dice the onion and slightly fry with olive oil. Add the broad beans and slightly fry them too. Add one glass of water and cook for ten minutes. In another bowl mix the yogurt, egg and flour. Add salt. Add the rest of the water and stir. Add it over the beans and continue to stir. When it starts bubbling add the chopped dill. Let it cook for five more minutes. Serve with some dill over the soup.
