Ravioli With Tomato Sauce


Some eating habits are alike in many countries. Especially the flour based ones. I guess pasta is the most common one. It must be loved in every culture and that's why there are so many pasta recipes. I will share with you my ravioli recipe today. It's easy to make and eat. You'll like my Tomato sauce ravioli.

Ingredients

(for 6)

For the dough:

- 300 gr flour (two and half glass)

- 2 eggs

- 4 table spoons of water

- salt

For the filling:

- 100 gr fetta cheese

- 20 gr parmesan or kashar

- 5 leafs of basil

- 10 purslane leaves

- 1 table spoon olive oil

For the tomato sauce:

- 3 tomato's

- 4 garlic cloves

- 5 table spoons of olive oil

1 extra egg for preparation

Instructions

In a large bowl beat the eggs and water. Add slowly the flour and make a dough. Leave to rest for 10 to 15 minutes.

Meanwhile put the fetta, parmesan, the basil and purslane to a kitchen robot and create a filling. If you don't have a robot cut the basil and purslane small and add the cheese and olive oil. Mix them until you have a smooth filling.

Grate or cut the tomato's. Paste the garlics. Put the tomato's, garlic, olive oil and salt into a pan and cook for ten minutes.

Beat the other egg in a bowl.

Divide your rested dough into four. Try to roll them in squares. Don't open all at once or they will dry. Put the filling in a line leaving approximately three fingers gap each time.

With the help of a brush apply the egg between the fillings. Roll the second dough and put over the first one. Cut the dough carefully in squares. Repeat for the left dough. Cook the pasta in a wide boiling water pan. Put the tomato sauce over and serve.
