Fetta Cheese Menemen
Is there anyone who doesn't like menemen? Maybe there is, but I'm sure they are few. I don't make it that often but once I remember, I have to eat. Especially if I have fresh bread, I take a piece of it and dip into the menemen. Happiness? Absolutely. Eventhough I newly eat it I want to eat again. For me it's an all time meal. Go and make and eat it.
Ingredients
(for two)
- 3 eggs
- 5 - 6 fresh pepper
- 1 tomato
- 1 onion
- 30 gr fetta cheese
- 4 table spoon liquid oil
Instructions
Cut the onions, the peppers and the tomato into small pieces. Put the oil to a pan and first put the onions and slightly fry for two minutes. Then add the peppers and fry until they smoothen. Add the tomato's and cook together for three to four more minutes. Season with salt.
Break the eggs and without stirring let them cook for a while. Add the fetta cheese over them. Cook for a minute. Stir and cook for three to four more minutes. You can serve with chillie flakes.
