Strawberry & Jelly Tart


I will try to give you as many strawberry recipes as I can before it's season ends. Eventhough nowadays it can be found in every season the best time for strawberries is spring. It is so delicious that sometimes I cook them with a little sugar and make fresh jam for the other day's breakfast. But today we have a different recipe. Her is the strawberry tart with jelly.

Ingredients

For the tart dough:

- 150 gr flour

- 150 gr butter

- 2 table spoons caster sugar

- 1 egg yolk

- 2 table spoons water

For the filling:

- 400 gr strawberries

- 2 table spoons caster sugar

Instructions

First we will do the filling and let it cool. Cut the strawberries into four pieces and put them to a pan. Add the caster sugar. In a mid heated oven cook them until the sauce thickens -about twenty minutes. Then take from the oven and let it cool.

Dice the butter. Add the flour, caster sugar and the a little salt. Crush them until they become smooth and a sandy feeling. You can do that with the help of a fork or food processor. Then slowly put the egg yolk and water and continue to mix. After a while it will stick together and you can roll it and make a dough.

Rest the dough in the refrigerator for half an hour. Heat the oven to 175 C degrees. Then roll out the dough and put it to a tray 24 - 28 cm wide. Cut the edges and make little holes to the dough with a fork. Put a baking paper over it and put chickpeas over it.

Cook in the oven for fifteen minutes. Then take it from the oven and take the chickpeas away. Put the filling over the dough. Put a wet baking paper over them so that the strawberries don't get burned. Put it back to oven and cook for 30 to 45 minutes more. Check while cooking so it don't get burned. When done take it out and let it cool.

Prepare a strawberry jelly, as it is still liquid pour it over your tart and put it to refrigerator. When the jelly is hard you can serve it.
